Mango Avocado Salsa


PREP TIME 20 mins • YIELD 3 cups


Ingredients

1 large mango, cut into 1/2-inch chunks, about 1 cup
1/4 cup cilantro, chopped
1/2 small red onion, diced, about 1/4 cup
1 medium red pepper, diced
Jalapeno pepper, minced, to taste
2 tablespoons freshly-squeezed lime juice
3/4 teaspoon kosher salt, plus more to taste
2 or 3 ripe avocados




Method
In a large mixing bowl, combine the mango, cilantro, red onion, red pepper, jalapeño pepper.  Toss them together with a large spoon.

Peel and cut the avocados into 1/2 inch chunks. Add the avocado, lime juice, and salt to the bowl with the mango. Gently fold the avocado into the mango mixture.

Allow the flavours to combine for 30 minutes. Taste the salsa and adjust the salt to suit your preference.

Store leftovers, covered, in the refrigerator for up to 2 days.
