Garam Masala/Curry Powder
This recipe is just one of many different curry powders.
Experiment with your favourite blend of spices.
Ingredients
2 Tablespoons cumin seed
1 Tablespoon black peppercorns
2 teaspoons whole cloves
2 Tablespoons coriander seed
2 teaspoons caraway seeds
1 1/2 teaspoons cardamom seeds
1 cinnamon stick
1/2 whole nutmeg, roughly chopped
or
1 teaspoon powdered nutmeg
Method
In a mortar and pestle or coffee grinder, process the ingredients until they become a fine powder.
Makes about 1/4 cup. Store in a well-sealed container for up to 2 months.
