Shawarma Spice Blend ~ Makes about 1/4 cup

Shawarma spice mix can be difficult to find at the store.  It has an earthy-sweet flavour with a little bit of heat.  If you don't have all of these spices, that's fine.  Everyone has their own version of shawarma, and that'll be yours.

1 Tablespoon ground cumin
1 Tablespoon ground coriander
1 teaspoon ground allspice
1 teaspoon sweet paprika
1 teaspoon ground turmeric
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon 

In a airtight container, combine all of the above ingredients.  Mix thoroughly. 
​The spice blend can last up to 6 months.
