Shepherd's Pie - 10-12 servings
The ground meat filling of my pie is the same as the recipe for Asian Style Meat Sauce on this site. Purchase the sauces below at a grocery store or at an Asian market. In London ON, United Supermarket is my go-to for Asian products.
Ingredients for Meat Mixture
• 8-inch or 20 cm square baking dish
3 Tablespoons vegetable oil
1 1/2 Tablespoons sesame oil
6 to 8 cooking onions, halved & sliced
2 cloves garlic, minced or thinly sliced
3 carrots, coined
15-20 button mushrooms, sliced or halved
1 1/2 to 2 lbs / 1 kg ground meat of choice
2 cups chicken or beef stock
3 Tablespoons of sauce for chicken
2 Tablespoons of oyster sauce
1 Tablespoon tamari or soy sauce
2 Tablespoons ponzu chili sauce, optional
Preparation
Heat the vegetable oil in a large saucepan. Add the onions, garlic, and mushrooms to the pan and sauté until tender. Begin adding the ground meat in small chunks, stirring ingredients often. Continue cooking on medium heat until the meat is no longer pink. Drain excess grease. Add the stock to the ingredients along with the sesame oil and the sauces. Allow the mixture to simmer for at least 1 hour or until the stock is absorbed. If you'd like a spicier pie, add dried or fresh chili peppers.
Middle Layer
Mix 1 1/2- 2 cups of peas, carrots, and corn. Layer evenly on top of the meat mixture.
Top Layer
Mashed and sweet potatoes, mashed. Layer evenly over the vegetables.
Bake at 350°F for 1 hour.
Serve with salad. Enjoy!
