Pork Schnitzel ~ Servings 4-6
If you enjoy pork schnitzel, preparing the schnitzel is worth the time invested.
Serve with your favourite side dish and a green salad. Don't forget the fresh lemon wedges!
Ingredients
1 or 2 boneless pork tenderloins
1/4 cup flour
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 egg, beaten
2 Tablespoons milk
3/4 cup fine dry breadcrumbs
1 tsp powdered garlic
1 tsp powdered onion
1 tsp paprika
Oil for frying - olive or avocado
lemon wedges, for serving

Method
- Cut tenderloin into 2-inch coins. Use a meat hammer tenderizer to pound the pieces to 1/4-inch thickness.
- Set out 3 shallow bowls. In the first bowl, add the flour, salt, and pepper. The second bowl has the egg and milk whisked together. The third bowl contains the breadcrumbs, powdered onion, powdered garlic, and paprika.
- Heat the oil in a large skillet on medium heat. Dredge the cutlets in the seasoned flour, then dip them in the egg mixture, and finally in the bread crumb mixture.
- Working in batches, sauté the cutlets for 3-4 minutes on each side. Remove the cutlets from the skillet and place them on a baking sheet.
- Bake at 350°F for 15-20 minutes or until fully cooked.
- Serve with your favourite side dish and salad.
- Don't forget the fresh lemon wedges. Lemon juice livens up the pork schnitzel!
