Pork Schnitzel ~ Servings 4 


If you enjoy schnitzel as much as I do, preparing them for you and your family is worth the time invested.  Usually I purchase a small pork roast, not too fatty, that can be cut into 1/2 inch slices.  To flatten the pieces, pound them on both sides with a meat hammer.  As pictured in the bowls below, first coat both sides of the schnitzel with flour, next with the whisked up egg & finally the breadcrumbs.  Add your favourite dried herbs to the crumbs for added flavour.
Serve your schnitzel with your favourite side-dish and a salad. Don't forget the fresh lemon wedges!



Ingredients
 
4 boneless pork chops, 1/2 inch thick
1/4 cup flour
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 egg, beaten
2 Tablespoon milk
3/4 cup fine dry breadcrumbs or panko
1 tsp paprika
oil, olive, grapeseed, or avocado
lemon wedges



Method

  1. Use a meat hammer to pound the pork cutlets to 1/4 inch thickness.  
  2. Set out 3 shallow bowls.  One with a mixture of the flour, salt and pepper.  The second with the egg and milk whisked together.  The third with a mixture of the breadcrumbs and paprika.
  3. Dredge cutlets.  Heat the oil in a large skillet on medium heat.  Dredge the cutlets first i the seasoned flour, then dip the cutlets in the egg mixture, and then into the mixture of bread crumbs.
  4. Working in batches, sauté the cutlets for 3 or 4 minutes on each side.  Remove the cutlets from the skillet and place on an oiled baking pan. 
  5. Bake at 350°F for 15-20 minutes or until fully cooked.​
