​​​Apple & Quince Compote
​
I love making compotes.  This mixture is apple and quince.  We have a quince bush in our front garden and this year it provided us with a dozen quinces.  Not many, but because they are quite tart, just add 2 or 3 quince with the other fruit of choice.  


Ingredients
 
2-3 large apples
2-3 quinces
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup maple syrup
1/2 cup water
salt, pinch


Preparation

Dice apples and quinces.  Add to saucepan.  Simmer on stove until desired doneness.  
Add more water if the fruit becomes too dry in saucepan.
Once the fruit has cooked down add cinnamon, nutmeg, maple syrup and salt.
Stir ingredients together.  

Adjust to taste.
Cool.

Makes 1-2 small mason jars.
