Caesar Salad Dressing
1/2 cup olive oil
2 Tablespoons mayonnaise
1 Tablespoon dijon mustard
2 garlic cloves, minced
1/4 cup fresh grated parmesan cheese
1 1/2 Tablespoon anchovy paste or finely chopped anchovies, to taste
2 Tablespoons fresh lemon juice
2 tsp Worchestershire sauce
In a glass bowl whisk together all the ingredients, except the olive oil, until smooth and creamy.
Slowly drizzle the olive oil, while whisking.
Do not pour the oil too quickly, but instead make sure that it has emulsified into the rest of the ingredients before pouring in more. Continue to drizzle and whisk until al the oil has been added.
Store in the fridge for up to a week or more.
